但馬屋的設計理念是“城中的『洋食屋』”，
關鍵詞是“休閒”和“享用屬於自己的鍋物”。
“像在咖啡廳一樣，
就算一人也可以隨意享受的涮涮鍋店”，
店舖設計目標是不受傳統涮涮鍋店形象的束縛，
這是對與“涮涮鍋=日本空間”不同的日本餐廳新形象的挑戰。
