除了選用優質的日本產黑毛和牛以外,火候與時間的控制同樣是令燒肉變得美味的黃金要訣。無論是赤身肉或是油脂較豐富的部位,肉片兩面炙燒的時間比例維持約7:3,就是最佳的燒肉秒數。因肉的水份在燒第一面時已充分冒出表面,反倒燒第二面時即可縮短炙燒時間,鎖住肉汁之餘又可避免燒焦。把握黃金時機品嚐和牛甘頤細緻的口感,推薦再配上一杯生啤,享受大口吃肉、大口喝酒的豪邁感!
Heat and Timing – two major factors which turn qualified Japanese Wagyu into pieces of delicious YAKINIKU. Grill your Japanese Wagyu by the “golden grilling duration ratio” 7:3 for both lean and fat parts, as the moisture inside the beef has already been emerged when the first side is grilled. To lock the gravy and prevent overcooking, you may shorten the grilling time for the other side.
